February Recipe – Carrot, Apple and Spinach Salad

Carrot, Apple and Spinach Salad
Featuring carrots, radishes, and ginger  – the root of the plant!
Makes 4-6 servings

 

Ingredients:
1/4 head red cabbage, chopped
3 cups spinach, chopped
1 Granny Smith apple, diced
3 carrots, diced
1 cup snow peas, cut into 4 pieces
3-4 thinly sliced radishes
1/4 cup cilantro, coarsely chopped
1/4 cup green onion, chopped

Dressing:
2  tablespoons olive or vegetable oil
2 tablespoons apple cider vinegar
juice of 1 lime
1/2 teaspoon ground ginger paste (or try grated fresh ginger!)
1/4 teaspoon salt
1/4 teaspoon pepper

Instructions:

  1. Prepare the ingredients by dicing, chopping, or slicing.
  2. Combine ingredients in a large salad bowl.
  3. Combine all dressing ingredients and whisk until well mixed.
  4. Add dressing to the salad bowl and toss to coat.
  5. Enjoy!

Optional:
Add orzo or rice for a more filling meal.
Add turnips or sweet potatoes for more root vegetables!
